We love getting breakfast in bed, we do for sure. But better than that, is collecting a ready-made healthy breakfast that has cooked itself overnight in the fridge.
Get a jam jar, or any jar you like. There are some great jars out in the market now, with cute checkered or polka dot lids. Take any of them. Put in a handful of oats and a spoonful of chia seeds at the bottom. Add almond milk and yogurt and stir. You can use soy milk or rice milk or any other vegan milk you want too. If you want it non-vegan, use regular dairy. Shake it up and let it sit in the fridge overnight. It will cook itself up through the night.
In the morning, take it out. Add in a little more almond milk to loosen up the mixture. Add in some chopped almonds, berries of your choice and a spoonful of maple syrup. Stir it, shake it, and it’s ready. Three minutes to prep, and it is ready to go.
This breakfast makes a great blood sugar stabilizer, helps lower cholesterol as well as the risk of cardiovascular diseases. The large amount of fiber in the dish will keep you full for long and assist weight loss.
